For the Pasta e Ceci:

  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 1 medium sweet onion, finely diced
  • 1 large carrot, peeled and diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 15 ounce can chickpeas, rinsed and drained
  • 1 1/2 cups dried ditalini pasta
  • 6 cups low-sodium vegetable broth
  • Salt and freshly ground black pepper, to taste
  • 1/3 cup grated Parmesan cheese

Instructions

  1. Sauté Vegetables: In a large pot over medium heat, warm the butter and olive oil. Sauté the onion and carrot until soft, about 5 minutes. Add garlic and cook for 1 more minute. Season with salt and pepper.
  2. Add Flavors: Stir in tomato paste, oregano, and thyme.
  3. Add Remaining Ingredients: Add chickpeas, pasta, and vegetable broth. Stir well.
  4. Simmer: Bring to a boil, then simmer for 10 minutes until pasta is al dente, stirring occasionally.
  5. Season and Finish: Adjust seasoning with salt and pepper. Stir in Parmesan cheese.
  6. Serve: Ladle into bowls, top with more Parmesan, and enjoy!
