Dry Ingredients:

  • 2 cups flour
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp pumpkin pie spice

Wet Ingredients:

  • 1 cup pumpkin puree
  • 1 3/4 cup buttermilk (room temperature)
  • 2 tbsp butter (melted and cooled)
  • 2 eggs (room temperature)
  • 1 1/2 tsp vanilla extract

Cinnamon Butter:

  • 1/2 cup butter (softened)
  • 1/4 cup powdered sugar
  • 2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Dry Ingredients: Whisk together flour, brown sugar, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon in a large bowl.
  2. Wet Ingredients: In a small bowl, mix pumpkin puree, buttermilk, melted butter, eggs, and vanilla.
  3. Add wet ingredients to dry ingredients; mix until just combined.
  4. Cinnamon Butter: Beat together softened butter, powdered sugar, cinnamon, vanilla extract, and salt using an electric mixer. Set aside.
  5. In a pan over medium heat, add butter or oil.
  6. Scoop out pancake batter using a ladle; cook for 2-3 minutes on each side.
  7. Top pancakes with cinnamon butter, maple syrup, and a sprinkle of pumpkin pie spice.

Notes

  • For extra flavor, you can add chopped nuts or chocolate chips to the pancake batter.
  • Make sure not to overmix the batter to keep the pancakes light and fluffy.
