Dry Ingredients:
- 2 cups flour
- 1/4 cup brown sugar
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 2 tsp pumpkin pie spice
Wet Ingredients:
- 1 cup pumpkin puree
- 1 3/4 cup buttermilk (room temperature)
- 2 tbsp butter (melted and cooled)
- 2 eggs (room temperature)
- 1 1/2 tsp vanilla extract
Cinnamon Butter:
- 1/2 cup butter (softened)
- 1/4 cup powdered sugar
- 2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- Dry Ingredients: Whisk together flour, brown sugar, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon in a large bowl.
- Wet Ingredients: In a small bowl, mix pumpkin puree, buttermilk, melted butter, eggs, and vanilla.
- Add wet ingredients to dry ingredients; mix until just combined.
- Cinnamon Butter: Beat together softened butter, powdered sugar, cinnamon, vanilla extract, and salt using an electric mixer. Set aside.
- In a pan over medium heat, add butter or oil.
- Scoop out pancake batter using a ladle; cook for 2-3 minutes on each side.
- Top pancakes with cinnamon butter, maple syrup, and a sprinkle of pumpkin pie spice.
Notes
- For extra flavor, you can add chopped nuts or chocolate chips to the pancake batter.
- Make sure not to overmix the batter to keep the pancakes light and fluffy.
