  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • 1 cup unsweetened dried coconut
  • 2 cups flour
  • 1 cup brown sugar
  • 1 ½ cups butter

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F and line a 9×13 inch baking dish with parchment paper.
  2. Make Date Filling: In a saucepan, simmer dates, butter, sugar, and vanilla for 20 minutes until thick. Set aside to cool.
  3. Prepare Crumble: In a bowl, mix oats, baking powder, coconut, flour, brown sugar, and butter until crumbly.
  4. Layer Base: Press half of the crumble mixture into the baking dish to form a base.
  5. Add Date Filling: Spread the date mixture over the base.
  6. Top with Crumble: Sprinkle the remaining crumble mixture over the date filling.
