Instructions

  1. Prepare Cabbage: Preheat your oven to 200°C (400°F). Cut the sweetheart cabbage into four wedges, keeping the core intact to hold the wedges together during roasting.
  2. Make Miso Butter and Roast: Soften 2 tablespoons of butter and mix it thoroughly with the miso paste. Brush this miso butter generously over all surfaces of the cabbage wedges, including the base. Place the wedges on a baking sheet and roast in the preheated oven for 30 to 35 minutes, until the edges are charred and caramelized while the centers remain slightly crispy.
  3. Prepare Garlic Breadcrumbs: While the cabbage roasts, melt the remaining 1 tablespoon of butter in a pan over medium heat. Add the Panko breadcrumbs and sprinkle in the garlic powder. Stir continuously to toast the breadcrumbs evenly and prevent burning, until they turn golden brown. Remove from heat immediately.
  4. Serve: Once the cabbage wedges are roasted, remove them from the oven and sprinkle the garlic breadcrumbs over the top. Optionally, garnish with chopped parsley to add a fresh herbal note. Serve warm as a delicious side dish.
