Crostini

  • 1 baguette

Instructions

  1. Preheat the oven and prepare the baking pan: Place an oven rack on the center row and preheat the oven to 350°F (175°C). Line a large rimmed baking sheet with foil or parchment paper and place an oven-safe baking rack on top.
  2. Mix the glaze: In a small bowl, combine brown sugar, black pepper, water, and cayenne pepper until well blended.
  3. Prepare the bacon: Lay bacon slices in a single layer on the baking rack. Coat both sides of the bacon with the brown sugar mixture, pressing the glaze into the meat for adherence. Sprinkle red pepper flakes if using.
  4. Bake the bacon: Bake bacon on the center rack for 15 minutes, then remove and flip each slice. Continue baking for another 10-15 minutes until bacon is crispy but not burnt.
  5. Cool the bacon: Remove bacon from the oven and transfer to a paper towel-lined plate to drain and cool.
  6. Preheat oven for crostini: Increase oven temperature to 425°F (220°C).
  7. Prepare the crostini: Slice the baguette into 1/2-inch slices and arrange cut side down on a foil-lined baking sheet. Brush lightly with olive oil and season with salt and pepper.
