  • 2 tablespoons tomato paste
  • 2 large carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon red pepper flakes (or Aleppo pepper), plus more for serving

  • 2 heaping cups spinach
  • 1/4 cup chopped fresh dill, stems removed

  4. Add broth and beans: Bring to a boil, then simmer for 20 minutes.
  5. Partially blend: Use an immersion blender to blend half the soup for texture.
  6. Finish: Stir in spinach, parsley leaves, dill, and vinegar.
  7. Serve: Ladle into bowls, drizzle with olive oil, and sprinkle with red pepper flakes. Serve hot.
