Ingredients

Romaine Lettuce

  • 1 large head of romaine lettuce

Apples

  • 12 medium apples (soaked in lemon water)

Mandarins

  • 34 mandarins (seedless)

Red Onion

  • 1/2 small red onion, finely chopped

Walnuts

  • 1/2 cup walnuts (optional)

Craisins

  • 1/4 cup craisins (dried cranberries)

Feta Cheese

  • 1/4 cup crumbled feta cheese (optional)

Sweet Balsamic Vinaigrette

  • 1/2 cup sugar
  • 3/4 cup extra-virgin olive oil
  • 1 tsp salt
  • 1/4 cup balsamic vinegar

Instructions

  1. Wash and Prep Lettuce: Wash, chop, and spin dry romaine lettuce, then transfer to a salad bowl.
  2. Prepare Mandarins: Peel and separate mandarins, then add to the salad bowl.
  3. Prep Apples: Chop apples into 1/2″ pieces. If not serving immediately, soak in lemon water to prevent browning.
  4. Assemble Salad: Top greens with onion, walnuts, craisins, and apples. Drizzle with dressing and sprinkle with feta.

Notes

  • You can customize this salad by adding grilled chicken or shrimp for a protein boost.
