Instructions

  1. PREP: Finely chop onion, bell pepper, celery, green onions, and parsley. Mince garlic. Remove corn kernels. Chop bacon and season shrimp.
  2. CRISP: Cook bacon in a dutch oven until starting to crisp. Drain grease.
  3. SAUTÉ: Sauté onion, bell pepper, celery with bacon. Add garlic.
  4. DEGLAZE: Add sherry to deglaze pot.
  5. ROUX: Melt butter, add flour, cook until darkened.
  6. SIMMER: Whisk in shrimp stock, water, parsley, and green onions. Simmer for 20 minutes.
  7. COOK: Add shrimp, corn, cream, remaining parsley, and green onions. Cook until shrimp are pink.
  8. FINISH: Adjust seasoning.
  9. SERVE: Garnish and serve hot.
