- PREP: Finely chop onion, bell pepper, celery, green onions, and parsley. Mince garlic. Remove corn kernels. Chop bacon and season shrimp.
- CRISP: Cook bacon in a dutch oven until starting to crisp. Drain grease.
- SAUTÉ: Sauté onion, bell pepper, celery with bacon. Add garlic.
- DEGLAZE: Add sherry to deglaze pot.
- ROUX: Melt butter, add flour, cook until darkened.
- SIMMER: Whisk in shrimp stock, water, parsley, and green onions. Simmer for 20 minutes.
- COOK: Add shrimp, corn, cream, remaining parsley, and green onions. Cook until shrimp are pink.
- FINISH: Adjust seasoning.
- SERVE: Garnish and serve hot.
