  • 1 cup Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup vegetable oil

Blueberry Mixture:

  • 1 1/2 cups blueberries (fresh or frozen)
  • 1 tablespoon all-purpose flour
  • 1/3 cup freshly squeezed lemon juice
  • 1 tablespoon granulated sugar

Lemon Glaze:

  • 1 cup icing sugar
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • Milk (as needed, to adjust the consistency of the glaze)

Instructions

  1. Preparation: Preheat the oven to 350°F. Grease and flour an 8.5×4.5×2.5 inch loaf pan.
  2. Dry Ingredient Mixture: Sift together flour, baking powder, and salt in a bowl.
  3. Wet Ingredient Mixture: Whisk yogurt, sugar, eggs, lemon zest, vanilla, and oil in another bowl.
  4. Combining Wet and Dry Mixtures: Gradually mix wet ingredients into dry ingredients.
  5. Blueberry Preparation: Coat blueberries with flour and lemon juice, then fold into batter.
  6. Baking: Bake batter in loaf pan for 50-70 minutes.
  7. Lemon Syrup Preparation: Heat lemon juice and sugar in a saucepan until dissolved.
  8. Cooling the Loaf: Cool loaf, poke holes, and pour lemon syrup over it.
