Soup Base

  • 2 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 28 oz Crushed tomatoes (one 28‑oz can)
  • 4 cups Chicken or beef broth
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • ¼ tsp Red pepper flakes (optional)
  • Salt and black pepper, to taste

Pasta

  • 8 oz Lasagna noodles, broken into bite-size pieces

Cheese and Garnish

  • 1 cup Ricotta cheese
  • 1 cup Mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped (for garnish)

Instructions

  1. Brown Meat: In a large pot or Dutch oven over medium-high heat, brown the ground beef or Italian sausage until deeply caramelized and flavorful, about 6-8 minutes. Drain excess fat if needed.
  2. Sauté Aromatics: Add the diced onion and minced garlic to the pot with the meat. Cook, stirring frequently, until the onions are soft, translucent, and fragrant, about 4-5 minutes.
  3. Bloom Paste: Stir in the tomato paste and cook for 2-3 minutes, until it darkens slightly and releases a rich aroma, enhancing the depth of flavor in the soup.
  4. Simmer Pasta: Pour in the crushed tomatoes and chicken or beef broth. Add the dried basil, oregano, red pepper flakes (if using), and season with salt and black pepper to taste. Bring the mixture to a boil, then reduce heat to a simmer. Add the broken lasagna noodles and cook until noodles are tender, approximately 10-12 minutes, stirring occasionally to prevent sticking.
  5. Serve Garnish: Ladle the hot soup into bowls. Top each serving with a generous spoonful of ricotta cheese, shredded mozzarella, grated Parmesan cheese, and a sprinkle of freshly chopped parsley. Serve immediately while warm.
