Instructions

  1. Preheat and Melt Cheese: Preheat your oven to 400°F (204°C). In a frying pan over medium heat, melt the shredded mozzarella cheese until fully melted and smooth. Alternatively, you can melt the cheese in the microwave. Remove from heat and immediately stir in the sour cream until well combined to create a creamy cheese mixture.
  2. Combine Ingredients: In a mixing bowl, add the almond flour, coconut flour, egg, and chopped chives to the warm cheese mixture. Stir and mix everything together until a cohesive dough forms.
  3. Chill the Dough: Wrap the dough tightly in plastic wrap and refrigerate it for 10 to 15 minutes. This step firms up the dough, making it easier to roll out.
  4. Roll Out Dough: Place the chilled dough between two sheets of parchment paper. Roll it out very thinly using a rolling pin. Remove the top sheet of parchment paper carefully after rolling.
  5. Cut and Prepare Crackers: Use a cookie cutter or knife to cut the rolled dough into desired shapes. Arrange the shapes on a parchment paper-lined baking sheet. Brush the tops of the crackers with the melted butter and sprinkle lightly with salt for extra flavor.
  6. Bake: Bake the crackers in the preheated oven for 8 to 10 minutes. Keep a close watch on them to prevent burning as they can cook quickly. If you have dough scraps leftover, refrigerate them for another 10 to 15 minutes before rolling out again and repeating the cutting process.
