For the Beef:

  • 400 g Beef (Half frozen steak cut)

For the Sauce:

  • 1 Onion (medium-size)
  • 1 tbsp Oil (Vegetable or neutral flavor oil)
  • 1 tsp Ginger (finely grated or paste)
  • 3 tbsp Soy sauce (all-purpose soy sauce or light soy sauce)
  • 2 tbsp Mirin (rice wine or dry sherry)
  • 1 tbsp Sake (Sake or rice wine)
  • 2 tbsp Brown sugar (or white sugar)

For Serving:

  • Spring Onions
  • 2 Eggs
  • Japanese red ginger pickle (or kimchi)

Instructions

  1. Freeze the Beef: Freeze the beef in the fridge for 1.5 to 2 hours until half frozen. Slice the beef into paper-thin slices. Cut the onion and spring onion into thin slices.
  2. Mix the Sauce: Combine all the sauce ingredients in a small mixing bowl.
  3. Stir Fry: Heat oil in a pan over medium heat. Stir fry the onion until soft and tender. Add the beef slices and ginger paste, cook until beef is no longer pink.
  4. Add Sauce: Pour the sauce mix in and stir well to combine all ingredients evenly.
  5. Cook: Cook for 2-3 minutes until the sauce thickens. Turn off the heat and add the chopped spring onions.
  6. Serve: Serve over a bed of steamed rice. Top with a poached egg, spring onions, and Japanese ginger pickle.
