  • 12 cloves garlic
  • 2 cups red wine
  • 2 cups beef broth
  • 28 ounces crushed tomatoes
  • 1 tablespoon fresh rosemary
  • 2 teaspoons Italian seasoning
  • 2 bay leaves
  • Polenta:

  • 3 cups chicken broth
  • 1½ cups half-and-half
  • 1 cup polenta
  • 1 cup gorgonzola cheese
  • 2 tablespoons butter

Instructions

  1. Prep Roast: Season roast, brown in oil. Remove and cook vegetables with pancetta.
  2. Braise: Add wine, broth, tomatoes, herbs. Cover and cook 2½-3 hours at 350°F.
