Bacon:

  • 1/2 lb bacon (cut into quarter pieces)

Vegetables:

  • 1 onion (finely chopped)
  • 1/2 cabbage (roughly chopped)
  • 1/2 lb potatoes (washed and diced)
  • 1 carrot (peeled and finely sliced)

Others:

  • 4 to 5 cups chicken stock
  • 1 bay leaf
  • Kosher salt and black pepper (to taste)
  • Parsley (chopped, for garnish)

Instructions

  1. Cook Bacon: In a large pot, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove and set aside.
  2. Sauté Vegetables: In the same pot with bacon fat, cook onion until softened, then add carrot. Cook for 2 minutes.
  3. Add Potatoes and Cabbage: Stir in potatoes and cabbage, season with salt and pepper, and cook until slightly softened.
  4. Cook Soup: Pour in chicken stock, add bay leaf, bring to a boil, then simmer for 15-20 minutes until vegetables are tender.
  5. Finish Soup: Return cooked bacon, adjust seasoning, ladle into bowls, garnish with parsley, and serve.
