Ingredients

  • 1 head of cabbage, chopped into 1 inch pieces
  • 1/2 cup unsalted butter
  • 1 cup chicken broth (or vegetable broth)
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 3 cloves garlic, minced
  • 1/2 teaspoon whole peppercorns
  • 2 bay leaves
  • 1/2 teaspoon salt
  • Salt and freshly ground pepper, to taste
  • Lemon wedges, for serving
  • Chopped butter, for serving
  • Chopped parsley, for garnish

Instructions

  1. Combine broth and seasonings: Add the unsalted butter, chicken or vegetable broth, lemon zest, lemon juice, minced garlic, whole peppercorns, bay leaves, and 1/2 teaspoon salt into the Instant Pot. Stir well to combine all ingredients.
  2. Add cabbage: Add the chopped cabbage pieces on top of the liquid mixture in the Instant Pot.
  3. Seal the Instant Pot: Close and lock the lid, making sure the steam release valve is set to the “Sealing” position to prepare for pressure cooking.
  4. Pressure cook: Set the Instant Pot to cook on high pressure for 6 minutes to cook the cabbage until tender.
  5. Release pressure: When cooking is complete, press the Cancel button, then carefully perform a quick release by turning the valve to “Venting” to release all steam before opening the lid.
  6. Stir cabbage: Open the lid once the pressure is fully released and stir the cabbage to mix the flavors and butter evenly.
  7. Season: Taste and season with additional salt and freshly ground pepper as desired.
  8. Serve: Serve the buttered cabbage with lemon wedges, extra butter, and a sprinkle of chopped parsley on top for garnish and added freshness.

Notes

  • This recipe can be made vegetarian by using vegetable broth instead of chicken broth.
  • Adjust cooking time slightly if you prefer softer or firmer cabbage.
  • Extra butter added at serving enhances richness and flavor.
  • Leftover cabbage can be refrigerated and reheated gently.
