Dry Ingredients:
- 1¼ cups all-purpose flour
- ¼ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Wet Ingredients:
- 1 egg
- 1¼ cups buttermilk
- 2 tablespoons melted butter
- ½ teaspoon vanilla extract
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In a separate bowl, beat the egg with buttermilk, melted butter, and vanilla.
- Combine and Mix: Pour the wet mixture into the dry ingredients and stir gently until just combined. Don’t overmix—lumps are fine.
- Rest the Batter: Let the batter rest for 5–10 minutes to help it fluff up when cooked.
- Cook Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface (about 2 minutes), then flip and cook for another 1–2 minutes until golden brown.
- Serve: Serve hot with butter, syrup, whipped cream, or your favorite toppings.
