For the bread:

  • 2 1/2 cups 2% milk
  • 2 1/2 tablespoons unsalted butter
  • 2 tablespoons instant (rapid rise) yeast
  • 1 tablespoon honey
  • 1 tablespoon kosher salt
  • 6 1/2 to 6 3/4 cups all-purpose flour, divided
  • 1 teaspoon canola oil (for oiling the bowl used for rising)
  • 1 egg, lightly beaten with 1 tablespoon cold water (for egg wash)

Instructions

  1. Melt the butter: Melt the butter and let cool until just warm. Heat the milk with honey to lukewarm, sprinkle yeast over top and let stand. Combine butter with milk mixture.
  2. Prepare the dough: Whisk 6 cups of flour with salt. Gradually pour milk mixture into the flour, stirring constantly. Work in remaining flour until a smooth dough forms.
  3. Knead the dough: Knead in a stand mixer or by hand until smooth and elastic.
  4. Rise the dough: Form into a ball, place in an oiled bowl, cover, and let rise until doubled.
  5. Shape the loaves: Divide dough, roll into rectangles, roll jelly roll style, and place in loaf pans.
  6. Second rise: Let the loaves rise in pans until they reach about 1/2-inch above the rim.
  7. Preheat and bake: Preheat oven, brush tops with egg wash, slash the tops, and bake until golden brown.
  8. Cool and enjoy: Cool the loaves on a wire rack before slicing and serving.
