Ingredients

Scale

Truffle Base

  • 2 cups white chocolate pieces
  • ½ cup heavy cream
  • 5 teaspoons dried culinary lavender
  • 2 tablespoons honey
  • 1 drop violet food coloring (optional)
  • 1 drop royal blue food coloring (optional)
  • 1 drop super red food coloring (optional)

Coating

  • 2 cups white chocolate (melted or tempered for dipping)
  • Powdered sugar (for coating hands)

Instructions

  1. Prepare Chocolate: Place the 2 cups of white chocolate pieces in a medium bowl and set aside.
  2. Infuse Cream: In a small saucepan, combine the heavy cream and dried culinary lavender. Heat over medium-low heat until the cream begins to bubble gently around the edges.
  3. Steep Lavender: Turn off the heat and let the lavender steep in the hot cream for 5 minutes, allowing the flavors to infuse.
  4. Strain and Combine: Strain the lavender-infused cream into the bowl with the white chocolate pieces to remove the lavender bits.
  5. Melt Chocolate Mixture: Melt the chocolate and cream mixture either in the microwave in 15-second increments—stirring between each—or over a bain-marie until smooth and fully melted.
  6. Add Honey and Color: Stir in 2 tablespoons of honey until fully incorporated. Add food coloring drops if desired to tint the truffle mixture.
  7. Chill Mixture: Pour the mixture into a clean pan and cover it with plastic wrap. Refrigerate for about 3 hours until the mixture is set and firm.
  8. Portion Truffles: Using a small cookie scoop or a 1½ teaspoon measuring spoon, scoop out portions of the set chocolate mixture.
  9. Shape Truffles: Coat your hands with powdered sugar to prevent sticking, then roll each portion into a smooth ball.
  10. Freeze: Place the rolled truffles in the freezer for 15-20 minutes until cold and firmer for dipping.
  11. Dip in White Chocolate: Dip the cold truffle balls into the melted or tempered white chocolate coating until fully covered.
  12. Set Coating: Place the dipped truffles on a parchment-lined sheet pan and allow the coating to set at room temperature or in the refrigerator.

Notes

  • Use culinary-grade dried lavender for best flavor and to avoid bitterness.
  • Adjust the amount of honey according to your desired sweetness.
  • Food coloring is optional and used mainly for visual effect.
  • Tempering the white chocolate for dipping ensures a shiny finish and good snap.
  • Store finished truffles in an airtight container in the refrigerator for up to 1 week.
  • Allow truffles to return to room temperature slightly before serving for best flavor and texture.
