Ingredients

Scale

Chicken and Potatoes

  • 4 boneless, skinless chicken breasts
  • 1 pound (about 450g) baby potatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon salt (divided)
  • 1/2 teaspoon black pepper (divided)
  • 1 tablespoon garlic powder (divided)
  • 1 tablespoon onion powder (divided)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Sauce and Garnish

  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken and potatoes.
  2. Season Potatoes: In a large mixing bowl, toss the halved baby potatoes with olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 tablespoon garlic powder, and 1/2 tablespoon onion powder to evenly coat.
  3. Sear Potatoes: Heat a large oven-safe skillet over medium-high heat and melt the butter. Place the seasoned potatoes cut side down in the skillet and cook until browned, about 4-5 minutes. Remove and set aside.
  4. Season Chicken: Season the chicken breasts on both sides with the remaining salt, pepper, garlic powder, onion powder, dried thyme, and dried oregano for full flavor.
  5. Sear Chicken: Using the same skillet, sear the chicken breasts over medium-high heat for 4-5 minutes on each side until golden brown. Remove and set aside.
  6. Sauté Garlic: Add minced garlic to the skillet and sauté for about 30 seconds until fragrant, stirring constantly to avoid burning.
  7. Make Sauce: Pour in the chicken broth and heavy cream, stirring well and scraping any browned bits from the bottom of the pan to incorporate all flavors.
  8. Add Cheese: Stir in shredded mozzarella and grated Parmesan cheese, allowing them to melt fully into a smooth and creamy sauce.
  9. Combine Ingredients: Return the chicken breasts to the skillet, nestling them into the creamy sauce. Arrange the browned potatoes around the chicken.
  10. Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes until the chicken is cooked through (internal temperature 165°F/74°C) and the potatoes are tender.
  11. Rest: Remove the skillet from the oven and let the dish rest for a few minutes to allow flavors to settle.
  12. Garnish and Serve: Sprinkle chopped fresh parsley over the top and serve warm for a savory high-protein meal.

Notes

  • Use an oven-safe skillet to easily transition from stovetop to oven.
  • For extra richness, you can add a splash of white wine to the sauce before baking.
  • Adjust seasoning to taste; you can add more garlic or herbs if desired.
  • Ensure chicken is cooked through by checking with a meat thermometer.
  • This dish pairs well with a fresh green salad or steamed vegetables for a balanced meal.
