Sweet Potatoes

Instructions

  1. Preheat Oven: Heat your oven to 400°F (204°C) to prepare for baking the sweet potatoes.
  2. Prepare Sweet Potatoes: Using a fork, pierce each sweet potato several times all over. Place them on a baking sheet lined with aluminum foil to catch any drips.
  3. Bake Sweet Potatoes: Bake the sweet potatoes in the preheated oven until they are soft and fork-tender, approximately 45 minutes.
  4. Cook Vegetables: While the potatoes bake, heat the olive oil in a deep skillet over medium heat. Add the diced onion and red bell pepper, cooking and stirring occasionally until tender, about 5 minutes.
  5. Add Seasonings: Stir in minced garlic, ground cumin, dried oregano, and salt to the skillet and cook for about 1 minute until fragrant.
  6. Cook Turkey: Add the ground white meat turkey to the skillet. Cook, breaking it apart with a spoon and stirring until the meat is no longer pink, about 3 to 5 minutes.
  7. Add Tomatoes and Simmer: Stir in the canned diced tomatoes with their juice. Reduce heat to medium-low, cover the skillet, and simmer the chili mixture for 20 minutes to blend flavors.
  8. Stir in Avocado: Remove the skillet from heat and gently fold in the diced avocado to add a creamy texture and heart-healthy fats.
  9. Stuff Potatoes: Slice each baked sweet potato lengthwise, opening slightly without cutting through completely. Spoon the turkey chili and avocado filling into the openings of the sweet potatoes.
