Dough
- 2 1/4 cups flour (+ more for dusting)
- 1 packet quick rise yeast
- 2 teaspoons salt
- 3/4 cup warm water (~110°F)
- 2 tablespoons olive oil
Toppings
- 12 strips gyro meat (chopped)
- 1/2 small red onion or shallot (sliced into rings)
- 8 cherry tomatoes (sliced)
- 5 artichoke hearts (sliced)
- 1/4 red/orange bell pepper (sliced into rings)
- 2 portabella mushrooms (chopped)
- 1 tablespoon lemon juice
- salt & pepper (to taste)
- cornmeal (for dusting, optional)
Tzatziki Sauce
- 1 cup plain Greek yogurt
- 4 tablespoons Greek marinade or dressing
- 3 tablespoons garlic (minced)
- 2 tablespoons fresh dill
- 1 tablespoon lemon juice
- salt & pepper (to taste)
Garnish
- 1 English cucumber (sliced for topping, optional)
- Activate Yeast: In a small bowl, activate the quick rise yeast by mixing it into lukewarm water (not exceeding 110°F). Let it sit for 10 minutes or until frothy, indicating the yeast is alive and ready to use.
- Make Dough: In a large bowl, combine the flour and salt. Add the olive oil and mix until crumbly. Make a well in the center and pour in the activated yeast mixture. Stir with a wooden spoon until a thick, sticky dough forms.
- Knead Dough: Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Add small amounts of oil if the dough is too dry. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about an hour or until doubled in size.
- Preheat Oven and Prepare Stone: While dough rises, preheat oven with a pizza stone under the broiler on high for 30 minutes. Then reduce oven temp to 375°F and preheat for another 30 minutes. Keeping the oven hot helps achieve a crispy crust.
- Roast Tomatoes and Artichokes: Arrange sliced cherry tomatoes and artichokes on a parchment-lined baking sheet. Drizzle with olive oil, season with salt, pepper, and parsley. Bake on the pizza stone for 10-15 minutes until tomatoes shrivel and artichokes start to brown.
- Make Tzatziki Sauce: In a bowl, combine Greek yogurt, fresh dill, lemon juice, minced garlic, and Greek marinade or dressing. Mix well and refrigerate until ready to use.
- Shape Dough: After the first rise, punch down the dough and knead on a floured surface for a few minutes. Shape into a disk and let it rise for an additional 10-30 minutes for better texture.
- Roll Out Dough: Roll the dough on a floured surface into a circle or square. Optionally sprinkle cornmeal on a wooden board or pizza stone to prevent sticking and add texture.
- Assemble Pizza: Brush dough with 1-2 tablespoons Greek marinade. Spread about 3/4 of the tzatziki sauce evenly over the surface, leaving a crust edge. Top with chopped gyro meat, mushrooms, roasted tomatoes, artichokes, sliced pepper, onion rings, and sprinkle feta cheese evenly.
- Bake Pizza: Bake the pizza at 375°F for 10-15 minutes until cheese begins to melt. Then switch oven to broil and broil for 5-10 minutes until crust is golden and pizza is cooked through.
- Garnish and Serve: Remove pizza from oven, garnish with fresh cucumber slices and drizzle with remaining tzatziki sauce. Slice and enjoy your flavorful Gyro Pizza!
