Scale

Main Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the oil: Heat the olive oil in a large skillet over medium heat.
  2. Prepare onion: Peel and finely chop the onion.
  3. Sauté onion: Add the chopped onion to the skillet and sauté until soft and translucent, about 3-4 minutes.
  4. Prepare garlic: Peel and mince the garlic cloves.
  5. Cook garlic: Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  6. Add ground turkey: Crumble ground turkey into the skillet, breaking it up with a spoon as it cooks.
  7. Brown turkey: Cook ground turkey for 6-8 minutes, stirring occasionally, until fully browned and no longer pink.
  8. Prepare zucchinis: Wash zucchinis, trim ends, cut them in half lengthwise, then slice each half into 1/4 inch thick half-moons.
  9. Add zucchini to skillet: Stir zucchini into the turkey mixture and cook 4-5 minutes until zucchini softens but remains firm.
  10. Season: Sprinkle dried oregano, salt, black pepper, and crushed red pepper flakes over the skillet.
  11. Add broth: Pour chicken broth into the skillet and stir to combine.
  12. Simmer: Reduce heat to low and simmer for 3-4 minutes to meld flavors and reduce broth slightly.
  13. Add cheese: Sprinkle grated Parmesan cheese over the mixture and stir until melted and evenly coating the ingredients.
  14. Adjust seasoning: Taste and add more salt, pepper, or red pepper flakes as desired.
  15. Serve: Serve immediately, garnished with extra Parmesan cheese if desired.

  • This dish is great served over rice, quinoa, or pasta if you want to add a carb component.
  • For a spicier kick, increase the crushed red pepper flakes to taste.
  • Use fresh Parmesan cheese for the best flavor and melt.
  • Ground turkey can be substituted with ground chicken or lean ground beef.
  • To keep this dish low carb, serve it as-is without additional sides.
