For the Casserole:
- 2 medium zucchini, sliced (about 2 pounds)
- 1 tbsp olive oil
- 1 small onion (diced)
- 2 garlic cloves (minced)
- 1 pound lean ground beef
- 2 tsp Italian seasoning
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 28 ounce can diced tomatoes (drained)
- 2 cups shredded mozzarella cheese
- Slice and Salt Zucchini: Slice zucchini into 1/2″ rounds, sprinkle with salt, let sit for 15 minutes, rinse, and pat dry.
- Sauté Onions and Beef: In a skillet, sauté onions, add garlic and ground beef, cook until browned.
- Add Seasonings: Stir in tomatoes, Italian seasoning, salt, and pepper. Remove from heat.
