  • 2 medium zucchini, sliced (about 2 pounds)
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 28 ounce can diced tomatoes (drained)
  • 2 cups shredded mozzarella cheese

Instructions

  1. Slice and Salt Zucchini: Slice zucchini into 1/2″ rounds, sprinkle with salt, let sit for 15 minutes, rinse, and pat dry.
  2. Sauté Onions and Beef: In a skillet, sauté onions, add garlic and ground beef, cook until browned.
  3. Add Seasonings: Stir in tomatoes, Italian seasoning, salt, and pepper. Remove from heat.
  4. Preheat Oven: Preheat to 350°F.
  5. Layer Casserole: In a baking dish, layer beef mixture, zucchini, and cheese twice.
  6. Bake: Bake for 20-25 minutes until cheese is melted and browned.
  7. Rest and Serve: Allow to rest for 10 minutes before serving.
