Marinade

  • 2 cloves Garlic, minced
  • 1 teaspoon Honey (optional)
  • Salt and Pepper, to taste

  • Fresh Thyme Sprigs
  • Crushed Red Pepper Flakes (optional)

Instructions

  1. Soak Skewers: Soak wooden skewers in water for 20–30 minutes if using wooden skewers to prevent them from burning during grilling.
  2. Prepare Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, fresh thyme (or dried thyme), honey if using, salt, and pepper until well combined to create a flavorful marinade.
  3. Assemble Skewers: Thread halloumi cubes, cherry tomatoes, lemon slices, red onion chunks, and any optional vegetables such as bell peppers, zucchini slices, or mushrooms onto the skewers in a balanced pattern.
  4. Marinate Skewers: Brush the assembled skewers generously with the prepared marinade to coat all ingredients evenly.
  5. Preheat Grill: Preheat a grill or grill pan to medium-high heat and lightly oil the grates to prevent sticking.
  6. Grill Skewers: Grill the skewers for 2–3 minutes per side, turning carefully until the halloumi is golden brown and the vegetables are slightly charred and tender.
