Instructions

  1. Marinate onions: In a small bowl, combine the thinly sliced red onions with the extra-virgin olive oil, red wine vinegar, and dried oregano. Let the mixture sit at room temperature while preparing the rest of the salad to allow the onions to soften and develop flavor.
  2. Prepare cucumbers: Thinly slice 2 to 3 English cucumbers and place them into a large salad bowl, ensuring an even layer to absorb the dressing.
  3. Make the dressing and combine: In a separate bowl, mix together the plain Greek yogurt, fresh lemon juice, pressed garlic, chopped fresh dill, kosher salt, and freshly ground black pepper. Pour this creamy dressing over the cucumbers, then add the marinated onions along with their soaking liquid to the bowl.
