Dressing:

  • 2/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 Tbsp dijon mustard
  • 1 minced garlic clove
  • 2 tsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions

  1. Add all ingredients to a bowl or mason jar. Combine the olive oil, red wine vinegar, dijon mustard, minced garlic, lemon juice, oregano, basil, salt, and black pepper in a bowl or mason jar.
  2. Whisk or shake until fully emulsified. Whisk vigorously or shake the ingredients together until well combined and emulsified.
  3. Taste and adjust seasonings. Taste the dressing and adjust the seasonings to your preference, adding more salt, pepper, or vinegar if needed.
  4. Store in an airtight container in the fridge for up to 1 week. Transfer the dressing to an airtight container and store it in the refrigerator for up to a week.
