This Greek Chicken Marinade with Greek Yogurt is a flavorful and tender dish that’s perfect for a quick weeknight dinner or weekend grilling. The yogurt-based marinade keeps the chicken juicy and adds a delicious tangy flavor.

Chicken Marinade:

  • 1.5 lbs chicken thighs (boneless, and skinless, about 8 chicken thighs)
  • ½ cup plain Greek yogurt (any fat percentage)
  • Juice of ½ a lemon
  • 3 tbsp olive oil
  • 1.5 tsp salt
  • 3 cloves garlic (pressed)
  • ½ tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • ¼ tsp red pepper flakes
  • 2 tbsp fresh parsley (finely chopped)

Instructions

  1. In a large 9×13” baking dish, add chicken thighs. Top with Greek yogurt, lemon juice, olive oil, salt, garlic, pepper, cumin, paprika, onion powder, red pepper flakes, and parsley.
  2. Mix well to coat all the chicken. Arrange the coated chicken in a single layer on the bottom of the dish. Cover tightly with plastic wrap and refrigerate to marinate.
  3. Preheat the oven to 450F. Remove plastic wrap and bake the chicken for about 25-30 minutes until fully cooked.
  4. Broil the chicken for 3 minutes to crisp the edges. Allow the chicken to rest before serving.

Notes

  • Marinate the chicken for at least 5 minutes, but for best results, marinate for up to 12 hours.
  • Ensure the chicken is cooked to an internal temperature of 165F.
  • Let the chicken rest after cooking to lock in the flavors.
