Chicken Marinade:
- 1.5 lbs chicken thighs (boneless, and skinless, about 8 chicken thighs)
- ½ cup plain Greek yogurt (any fat percentage)
- Juice of ½ a lemon
- 3 tbsp olive oil
- 1.5 tsp salt
- 3 cloves garlic (pressed)
- ½ tsp black pepper
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp onion powder
- ¼ tsp red pepper flakes
- 2 tbsp fresh parsley (finely chopped)
- In a large 9×13” baking dish, add chicken thighs. Top with Greek yogurt, lemon juice, olive oil, salt, garlic, pepper, cumin, paprika, onion powder, red pepper flakes, and parsley.
- Mix well to coat all the chicken. Arrange the coated chicken in a single layer on the bottom of the dish. Cover tightly with plastic wrap and refrigerate to marinate.
- Preheat the oven to 450F. Remove plastic wrap and bake the chicken for about 25-30 minutes until fully cooked.
- Broil the chicken for 3 minutes to crisp the edges. Allow the chicken to rest before serving.
Notes
- Marinate the chicken for at least 5 minutes, but for best results, marinate for up to 12 hours.
- Ensure the chicken is cooked to an internal temperature of 165F.
- Let the chicken rest after cooking to lock in the flavors.
