These Paleo Freezer Breakfast Burritos are a delicious, grain-free, and gluten-free morning meal perfect for busy days. Made with homemade Paleo tortillas, savory breakfast sausage, sautéed peppers and onions, scrambled eggs, and optional shredded cheddar cheese, they can be prepared in advance and frozen for up to three months. Easy to reheat and packed with protein, they make a wholesome, primal-friendly start to your day.

For the Paleo Tortillas

  • 1 batch Perfect Paleo Tortillas (see recipe link)

For the Filling

  • 1 pound breakfast sausage, bulk or casing removed and chopped
  • 1 large red onion, chopped
  • 1 medium green pepper, finely chopped
  • 1 medium red pepper, finely chopped
  • 8 large eggs
  • Sea salt, to taste
  • 2 tablespoons coconut oil, divided (or butter/ghee)
  • 1/2 pound raw cheddar cheese, shredded (optional, if dairy is tolerated)

Instructions

  1. Prepare Paleo Tortillas: Make one batch of the Perfect Paleo Tortillas according to the provided recipe and set them aside to cool.
  2. Cook Sausage and Vegetables: In a large skillet with sides, heat 1 tablespoon of coconut oil over medium heat. Add the breakfast sausage, red onion, green pepper, and red pepper. Cook, stirring occasionally, until the sausage is fully cooked and no longer pink, and the vegetables are tender. Remove from heat and set aside.
  3. Cook Eggs: In a separate large skillet, heat the remaining 1 tablespoon of coconut oil. Beat the eggs in a bowl and pour them into the skillet, cooking over medium-low heat. Stir gently and season liberally with sea salt and pepper until the eggs are softly scrambled but set. Remove from heat and set aside.
  4. Assemble Burritos: Lay out each tortilla and evenly divide the sausage mixture, scrambled eggs, and shredded cheddar cheese (if using) among them. Roll each tortilla tightly into a burrito wrap. Wrap each burrito individually in foil or wax paper.
  5. Freeze and Store: Place the wrapped burritos in a large plastic freezer bag. Seal the bag and store in the freezer for up to 3 months.

Notes

  • Reheating from Refrigerated: Use a HotLogic Portable Oven for 60-90 minutes or a toaster oven at 350°F for 15 minutes.
  • Reheating from Frozen: Use a HotLogic Portable Oven for 2-3 hours or a toaster oven at 350°F for 30 minutes.
  • Microwave reheating instructions are not provided due to lack of recommendation and usage.
  • Using coconut oil or butter/ghee can be chosen based on dietary preferences.
  • Cheese is optional for those who tolerate dairy; omit for dairy-free version.
