For the Ginger Simple Syrup

  • 4 inches fresh ginger, roughly chopped
  • 2 cups water
  • 2 tbsp agave syrup

For the Refresher

  • 1 handful fresh mint
  • Lime-flavored sparkling water (to fill the glass)
  • Fresh lime juice (to taste)
  • Ice (for serving)

Instructions

  1. Prepare the ginger simple syrup: Add the roughly chopped ginger, water, and agave syrup to a small saucepan. Bring the mixture to a boil over medium-high heat and let it boil for 1 to 2 minutes.
  2. Simmer the syrup: Reduce the heat to low and simmer for about 15 minutes to infuse the flavors and reduce the syrup slightly.
  3. Strain and cool: Strain out the ginger pieces using a fine sieve or strainer. Allow the ginger syrup to cool completely before use. Store any leftover syrup in the refrigerator.
  4. Muddle the mint: Place a few sprigs of fresh mint into the bottom of a serving glass. Gently muddle the mint to release its scent and flavors without tearing the leaves excessively.
  5. Add ice and syrup: Fill the glass with ice cubes, then pour the chilled ginger simple syrup until it fills about 1/4 to 1/3 of the glass, adjusting to your sweetness preference.
  6. Top with sparkling water: Fill the rest of the glass with lime-flavored sparkling water to add effervescence and citrus notes.
  7. Add lime juice and stir: Squeeze fresh lime juice into the glass to taste, then stir gently to combine all the flavors well.
  8. Garnish and serve: Garnish with a fresh sprig of mint for aroma and visual appeal, then serve immediately and enjoy your refreshing drink.
