Dry Ingredients:

  • 1 ⅔ cups fine almond flour
  • ½ tsp baking soda
  • 1/2 tsp sea salt

Wet Ingredients:

  • ½ cup unsalted butter (1 stick, softened)
  • ⅓ cup sugar-free brown sugar*
  • 1 large egg
  • 1 tsp vanilla extract

Additional:

  • 1 cup sugar-free chocolate chips

Instructions

  1. Add the butter and sugar to a stand mixer and beat until combined and fluffy.
  2. You can also use a mixing bowl and an electric hand whisk.

  3. Beat in the egg and vanilla extract.
  4. Add the remaining dry ingredients except for the chocolate chips. Beat until a sticky dough forms and then add the chocolate chips.
  5. Scrape the bowl and mix well. Refrigerate if needed, then form dough into balls.
  6. Preheat oven, line baking sheet, and place dough balls on the sheet with enough space for spreading.
  7. Bake until desired doneness is achieved.
  8. Cool before enjoying!
