Potatoes

  • 1 ½ lbs baby potatoes, halved or quartered if large
  • 2 tbsp olive oil
  • 2 cloves garlic, minced (half of the total)
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup grated Parmesan cheese (remaining half)

Instructions

  1. Preheat Oven: Heat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prevent sticking.
  2. Prep Potatoes: In a mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, Italian seasoning, paprika, salt, and black pepper until well coated. Spread the potatoes evenly on one side of the prepared baking dish.
  3. Prep Chicken: Drizzle the chicken breasts with the remaining 1 tablespoon of olive oil. Rub the chicken with the other half of the minced garlic, a pinch of salt, black pepper, and half of the grated Parmesan cheese. Place the chicken breasts on the other side of the baking dish.
