Instructions

  1. Prep the steak: Pat your steak cubes dry with paper towels to ensure a good sear. Season them generously with salt and freshly ground black pepper to enhance the natural beef flavor.
  2. Sear the steak: Heat olive oil in a large skillet over medium-high heat. Add the steak cubes in batches to avoid overcrowding. Sear each batch for 2–3 minutes per side, or until the cubes develop a rich brown crust. Remove from the pan and set aside to rest.
  3. Make the garlic butter: In the same skillet, reduce the heat to medium. Add the 3 tablespoons of unsalted butter and melt it. Add the minced garlic and sauté for about 30 seconds until fragrant, careful not to burn it. Return the steak bites to the pan and toss well to coat with the garlic butter.
  4. Prepare the Parmesan cream sauce: In a separate small saucepan, melt 1 tablespoon of unsalted butter over medium heat. Add the 2 cloves of finely minced garlic and sauté for 30 seconds until fragrant. Pour in the heavy cream, bring it to a gentle simmer, and gradually stir in the freshly grated Parmesan cheese until the sauce is smooth and creamy.
