Steak Bites

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 tbsp butter, divided

Potatoes

  • 1 lb baby potatoes, halved or quartered
  • 1 tbsp butter, divided
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Garlic Butter Sauce

  • 1 tbsp butter, divided
  • 4 cloves garlic, minced

Instructions

  1. Prepare potatoes: In a large skillet over medium heat, melt 1 tbsp butter with 1 tbsp olive oil. Add the halved or quartered baby potatoes. Season with salt, pepper, dried rosemary, and thyme. Cook for 10–12 minutes, stirring occasionally until the potatoes are fork-tender and golden brown. Remove the potatoes from the skillet and set aside.
  2. Sear steak: In the same skillet, add 1 tbsp butter. Add the sirloin steak bites in a single layer to avoid overcrowding. Sear the steak for 2–3 minutes per side until browned and cooked to your preferred doneness. Remove the steak bites from the skillet and set aside.
  3. Make garlic butter: Reduce the heat to low and add the remaining 1 tbsp butter along with the minced garlic to the skillet. Sauté the garlic for about 1 minute until fragrant but not burnt.
  4. Combine & serve: Return the cooked steak bites and potatoes to the skillet. Toss everything gently in the garlic butter sauce ensuring the steak and potatoes are well coated. Garnish with freshly chopped parsley. Serve warm and enjoy.
