Dough Ingredients
- 4 1/2 tablespoons unsalted butter
- 2 tablespoons minced garlic
- 3 1/2 cups + 1 tablespoon all-purpose flour
- 3 tablespoons chopped fresh parsley
- 1 tablespoon granulated sugar
- 2 1/4 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 cup whole or 2% milk (warmed to 110°F)
- 1 large egg (room temperature)
- 1 beaten egg (for brushing tops)
Garlic Butter Topping
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Flaky sea salt (for finishing)
- Prepare the pan: Lightly butter the bottom and sides of a 9×13-inch baking pan and set aside.
- Melt garlic butter: In a small pot, melt 4 1/2 tablespoons of butter and add 2 tablespoons minced garlic. Cook for 1-2 minutes until fragrant, then remove from heat and let cool while measuring other ingredients.
- Make the dough: In a stand mixer bowl, combine 3 1/2 cups + 1 tablespoon flour, parsley, sugar, yeast, and salt. Add warmed milk (110°F), 1 large room temperature egg, and the cooled garlic butter. Knead on low speed with a dough hook for 10-12 minutes until smooth and tacky. If too sticky, add flour 1 tablespoon at a time until workable.
- Shape rolls: Divide dough into 12 equal portions (~67 grams each). Shape each into a smooth ball, pinching the bottom seam tight. Place the balls seam-side down in the prepared pan.
- Proof the dough: Cover the pan with plastic wrap or a clean kitchen towel and let dough rise in a warm spot for 1-2 hours until doubled in size.
- Preheat oven: Set oven to 350°F (180°C).
- Apply egg wash and bake: Brush the tops of rolls with the beaten egg wash. Bake for 20-30 minutes or until golden brown on top.
- Prepare garlic butter topping: While rolls bake, melt 2 tablespoons butter in a pot, add 1 tablespoon minced garlic and cook 1-2 minutes until fragrant. Remove from heat, stir in chopped parsley.
- Finish the rolls: When rolls come out of the oven, immediately brush them with the prepared garlic butter and sprinkle with flaky sea salt. Serve warm.
Notes
- Measure flour by spooning it into the measuring cup and leveling off with a knife to avoid packing for accurate results.
- Use a kitchen scale for precise dough portioning (67 grams per roll) for even baking.
- Ensure milk is warmed to about 110°F to activate yeast without killing it.
- Kneading time is essential for developing gluten — do not rush this step.
- For best flavor, use fresh parsley and fresh minced garlic.
- The rolls are best served warm on the day they are baked but can be refrigerated and reheated.
