Dry Ingredients:

  • 1 1/3 cup flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients:

  • 1 stick of softened butter
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup sour cream or Greek yogurt (low fat)

Additional:

  • 2 cups rough chopped strawberries
  • Sugar for finishing

Instructions

  1. Preheat Oven: Preheat oven to 350 degrees. Grease a 9-inch round pan and line the bottom with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, combine flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: Whip butter and sugar together until fluffy.
  4. Add Eggs and Vanilla: Beat in eggs one at a time, then add vanilla and mix well.
  5. Alternate Mixing: Gradually add the flour mixture and sour cream, starting and ending with the flour mixture.
  6. Fold in Strawberries: Gently fold in chopped strawberries with a spatula.
  7. Bake: Spread the batter in the prepared pan, sprinkle sugar on top, and bake for 35-40 minutes or until a cake tester comes out clean.
  8. Cool and Serve: Let the cake cool before serving. It can be easily removed from the pan for plating.

  • For added flavor, you can sprinkle some powdered sugar on top before serving.
