Dry Ingredients:
- 1 1/3 cup flour
- 1 1/4 tsp baking powder
- 1/4 tsp salt
Wet Ingredients:
- 1 stick of softened butter
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla
- 1/2 cup sour cream or Greek yogurt (low fat)
Additional:
- 2 cups rough chopped strawberries
- Sugar for finishing
- Preheat Oven: Preheat oven to 350 degrees. Grease a 9-inch round pan and line the bottom with parchment paper.
- Mix Dry Ingredients: In a medium bowl, combine flour, baking powder, and salt. Set aside.
- Cream Butter and Sugar: Whip butter and sugar together until fluffy.
- Add Eggs and Vanilla: Beat in eggs one at a time, then add vanilla and mix well.
- Alternate Mixing: Gradually add the flour mixture and sour cream, starting and ending with the flour mixture.
- Fold in Strawberries: Gently fold in chopped strawberries with a spatula.
- Bake: Spread the batter in the prepared pan, sprinkle sugar on top, and bake for 35-40 minutes or until a cake tester comes out clean.
- Cool and Serve: Let the cake cool before serving. It can be easily removed from the pan for plating.
