Filling:

  • 7 ounces bittersweet chocolate
  • 4 large eggs, at room temperature
  • 3/4 cup white sugar
  • 1/4 cup packed brown sugar
  • 3 tablespoons water, at room temperature
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/2 cup unsalted butter, at room temperature, cut into 8 pieces
  • 1/2 cup heavy cream

Topping:

  • 3 ounces cream cheese, softened
  • 3 tablespoons white sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 1/2 cups heavy cream
  • chocolate curls or chocolate sprinkles

Instructions

  1. Preheat and Prepare Crust: Preheat oven to 375°F (190°C). Grease a 9×9-inch baking pan. Mix melted butter and sugar, add crushed crackers, press into pan, and bake for 8 minutes. Cool.
  2. Make Filling: Melt chocolate, whisk eggs, sugars, water, and salt over simmering water until sugar dissolves. Beat until fluffy, add chocolate and vanilla, beat in butter. Fold in whipped cream. Spread over crust and chill.
  3. Prepare Topping: Beat cream cheese, sugar, vanilla, and salt. Beat in cream until stiff peaks form. Spread over chocolate layer and chill for at least 4 hours.
