Ingredients

Scale

Onion Mixture

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 2 large yellow onions, thinly sliced (about 2 cups)
  • ¼ cup (60 g) red wine
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 ½ cups (360 g) beef broth
  • 1 tablespoon Worcestershire sauce

Main Ingredients

  • 1 package (16 ounces) potato gnocchi, uncooked
  • 1 ½ cups (169.5 g) Gruyère cheese, shredded
  • parsley, for garnish

Instructions

  1. Cook Onions: Heat the olive oil and butter in a large oven-safe, heavy-bottomed skillet over medium heat. Once the butter has melted, add the thinly sliced yellow onions. Sauté for 15-20 minutes, stirring frequently, until the onions are very tender and have developed a deep caramel color.
  2. Add Red Wine: Toward the end of cooking the onions, pour in the red wine. Continue cooking until the wine has completely evaporated, enhancing the depth of flavor in the onions.
  3. Season Onions: Sprinkle the kosher salt, black pepper, and garlic powder over the caramelized onions. Stir well to combine all the flavors.
  4. Add Broth and Worcestershire Sauce: Pour in the beef broth and Worcestershire sauce into the skillet. Stir to combine all ingredients and bring the mixture to a simmer over medium heat.
  5. Cook Gnocchi: Reduce the heat to low and add the uncooked potato gnocchi. Simmer for about 3-5 minutes, stirring occasionally, until the gnocchi are cooked through and tender. The gnocchi will puff up and become soft.
  6. Top with Cheese and Broil: Once the gnocchi is cooked, evenly sprinkle the shredded Gruyère cheese over the top of the skillet. Place the skillet under the broiler for 2-3 minutes, or until the cheese is melted, bubbly, and lightly browned.
  7. Garnish and Serve: Carefully remove the skillet from the oven. Garnish with fresh parsley and serve immediately while hot and cheesy for a comforting and flavorful dish.

Notes

  • Use a heavy-bottomed, oven-safe skillet to transition from stovetop to broiler without transferring the food.
  • Be sure to watch the broiler closely to prevent the cheese from burning.
  • For a vegetarian version, substitute the beef broth with vegetable broth and omit Worcestershire sauce or use a vegetarian alternative.
  • Gnocchi cooks quickly; test for doneness by tasting or when they float to the surface.
  • Leftovers can be refrigerated in an airtight container for up to 2 days and reheated gently in the oven.
