  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste

For Brushing

  • 1 egg, beaten

Instructions

  1. Prepare the Filling: Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let the mixture cool completely.
  2. Combine Ingredients: In a mixing bowl, combine the cooled spinach mixture with crumbled feta cheese and ricotta cheese (if using). Season with salt and black pepper to taste. Mix well until evenly combined.
  3. Roll Out Pastry: On a lightly floured surface, roll out the puff pastry sheet to smooth out creases if needed. Cut the pastry into squares or circles, approximately 3 to 4 inches in diameter or width.
  4. Fill and Fold: Place a spoonful of the spinach and cheese filling in the center of each pastry piece. Fold the pastry over to form a triangle or half-moon shape, pressing the edges firmly to seal. You can crimp the edges with a fork for a decorative seal.
  5. Egg Wash: Brush the tops of the filled pastries with the beaten egg to give them a beautiful golden and shiny finish when baked.
  6. Bake: Preheat your oven to 400°F (200°C). Arrange the pastries on a baking sheet lined with parchment paper. Bake for 20 to 25 minutes or until the pastries are puffed up and golden brown. Remove from the oven and allow to cool slightly before serving.
