Ingredients

Scale

Sushi Rice

  • 3 cups cooked brown sushi rice
  • 2 tbsp sesame oil
  • Pinch of salt

Crab Mixture

  • 1 lb imitation crab (or cooked shrimp)
  • ¾ cup mayonnaise
  • 2 tbsp sriracha
  • Juice of half a lime
  • ½ cup thinly sliced green onion

Toppings & Sides

  • 2 tbsp sesame seeds
  • 2 tbsp soy sauce or tamari
  • 3 avocados, thinly sliced
  • 3 cucumbers, thinly sliced
  • Package of nori sheets

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sushi casserole.
  2. Prepare Sushi Rice: Cook the sushi rice according to package instructions. Once cooked, transfer 3 cups of the rice into a bowl and mix in the sesame oil and a pinch of salt thoroughly to season it evenly.
  3. Pack Rice in Dish: Firmly press the seasoned sushi rice into a 15 inch by 10 inch baking dish to create an even base layer.
  4. Make Crab Mixture: In a separate bowl, combine the imitation crab (or cooked shrimp) with mayonnaise, sriracha, lime juice, and sliced green onion. Mix well until all ingredients are fully incorporated.
  5. Layer Crab Mixture: Spread the crab mixture evenly over the packed sushi rice in the baking dish, forming a uniform top layer.
  6. Add Toppings: Sprinkle sesame seeds over the crab layer, add thinly sliced nori, a pinch of salt, and drizzle soy sauce evenly on top.
  7. Bake: Place the baking dish in the oven and bake for 15-20 minutes or until the top is golden brown and bubbly.
  8. Serve: Once baked, top the sushi bake with thinly sliced cucumber and avocado. Serve portions on individual nori sheets for assembly and immediate enjoyment.

Notes

  • You can substitute imitation crab with cooked shrimp or real crab meat for different flavors.
  • Using brown sushi rice adds a nuttier flavor and extra fiber; white sushi rice can be used for a classic texture.
  • Adjust the sriracha amount based on your heat preference.
  • Make sure to slice the cucumber and avocado thinly for easy layering and rolling.
  • This sushi bake is best enjoyed immediately but can be stored covered in refrigerator for up to 2 days.
  • For a gluten-free option, use tamari instead of soy sauce.
