Cod:

  • 4 cod fillets (56 oz each)

Marinade:

  • ¼ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1½ tsp fresh grated ginger
  • 2 cloves garlic, minced
  • 1 tsp cornstarch + 1 tbsp water (optional for thickened glaze)

Garnish:

  • Green onions and sesame seeds for garnish
  • Optional: red pepper flakes or sriracha for heat

Instructions

  1. Make the marinade: In a small bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, garlic, and ginger.
  2. Marinate the fish: Place cod in a shallow dish or resealable bag. Pour the marinade over and let sit for 15–30 minutes.
  3. Cook the cod:
    • To bake: Preheat oven to 400°F. Place cod on a parchment-lined baking dish and bake for 12–15 minutes, or until the fish flakes easily.
    • To pan-sear: Heat a little oil in a skillet over medium heat. Cook cod 3–4 minutes per side, spooning extra marinade over top.
    • Optional glaze: Pour leftover marinade into a small saucepan. Bring to a simmer, stir in cornstarch slurry, and simmer 1–2 minutes until thickened.
  4. Serve: Spoon sauce over fish and top with green onions and sesame seeds. Serve with rice, sweet potatoes, or steamed veggies.
