Dough Ingredients
- 1 Stick unsalted Butter, softened (113g)
- 1 Stick Margarine, softened (113g)
- 3/4 cup Sugar (150g)
- 2 Eggs
- 1 tsp Vanilla Extract
- Pinch of Salt
- 3 1/2 cups All-purpose Flour (440g)
- 1 heaping tsp Baking Powder
- Optional: Gel Food Coloring
- Cream Butter and Margarine: Place softened unsalted butter and margarine in an electric mixer bowl. Beat on medium speed until the mixture is light and fluffy, about 2-3 minutes.
- Add Sugar and Eggs: Gradually add sugar in two additions, mixing well after each. Alternate by adding eggs one at a time, beating thoroughly after each addition to incorporate fully.
- Add Vanilla Extract: Pour in vanilla extract and mix briefly until combined.
- Mix Dry Ingredients: In a separate bowl, whisk together all-purpose flour, salt, and baking powder to evenly distribute the leavening agent.
- Combine Dough by Hand: Gradually add the flour mixture to the butter mixture by hand, a little at a time, folding gently to avoid overworking the dough which can make cookies tough.
- Chill Dough: Cover the dough and chill it in the refrigerator for about 15 minutes to firm up, making it easier to handle.
- Chill Baking Pans: Place baking sheets in the refrigerator and chill for at least 15 minutes to reduce spreading and help shapes hold during baking.
- Prepare Cookie Press: Load the chilled dough into your spritz cookie press according to manufacturer instructions. If desired, add gel food coloring to dough for colorful cookies prior to loading.
- Adjust Dough Consistency: If dough feels too soft, chill it a little longer. If it’s too stiff, let it sit at room temperature briefly to soften slightly.
- Press Cookies: Press cookies out onto ungreased, chilled baking sheets, spacing them about 1 inch apart.
- Add Decorations: Before baking, sprinkle cookies with sanding sugar or festive sprinkles as desired.
- Bake: Bake in a preheated oven at 350°F (177°C) for 10 to 15 minutes until the edges are lightly golden but centers remain soft.
- Cool: Remove from oven and allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
- Do not overwork the dough to keep cookies tender.
- Chilling both the dough and the baking sheets helps maintain the cookie shapes.
- Use gel food coloring instead of liquid to avoid changing dough consistency.
- Store cookies in an airtight container at room temperature for up to 1 week.
- These cookies can also be frozen after baking for up to 3 months.
