Lentil Burger Mixture

  • 1 ½ cups dried red lentils
  • 2 large garlic cloves, minced
  • 1 large shallot or 1 small onion, small diced (about 1/3 cup)
  • 1/3 cup grated carrots (about 3 small carrots)
  • 1 tablespoon tomato paste
  • ¼ cup chopped fresh cilantro
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400ºF (200ºC) and line a large baking sheet with parchment paper or a silicone baking mat. This will be for baking the patties if you choose the oven method.
  2. Soak Lentils: Soak the dried red lentils in enough water to cover them by about 2 inches. Let soak for 2 hours. After soaking, rinse and drain the lentils thoroughly to prepare them for blending.
  3. Process Ingredients: Place the soaked lentils, minced garlic, diced shallot or onion, grated carrots, tomato paste, chopped cilantro, salt, and black pepper into a food processor. Pulse several times until the mixture is well combined and holds together when shaped. Scrape down the sides of the food processor bowl as needed to ensure even mixing.
  4. Shape Patties: Using approximately ¼ cup of the mixture per patty, scoop and shape it into round patties about ½ inch thick. This size helps with even cooking and easy handling.
  5. Cooking Option 1 – Bake: Place the patties on the prepared baking sheet and bake in the preheated oven for 10 minutes. Flip the patties over carefully and bake for an additional 10 minutes until both sides are crispy and golden brown.
  6. Cooking Option 2 – Pan-Fry: Heat a neutral flavored cooking oil in a large nonstick skillet until it reaches about halfway up the sides of the patties. Pan-fry the patties for approximately 4 minutes on each side, or until they turn golden and crispy. Cook in batches if necessary to avoid overcrowding the pan. Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil.
  7. Serve: Serve the lentil burgers on buns with your favorite toppings, alongside a fresh salad, or with oven-roasted potatoes for a complete meal.
