Ingredients

Scale

Fruits

  • 2 cups fresh strawberries, hulled and chopped
  • 2 cups fresh raspberries

Other Ingredients

  • 4 cups granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • 1 package (1.75 oz or 49 g) pectin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves

Instructions

  1. Prepare the fruits: Hull and chop the strawberries, then rinse the raspberries thoroughly to remove any dirt or debris.
  2. Mash the fruits: Combine the strawberries and raspberries in a large mixing bowl and mash them together until well blended but still slightly chunky.
  3. Cook the fruit mixture: Transfer the mashed fruit to a large pot. Add the lemon juice and granulated sugar, then bring the mixture to a rolling boil over medium-high heat while stirring frequently.
  4. Add pectin and spices: Stir in the pectin, ground cinnamon, and ground cloves. Continue stirring and maintain a boil for 1-2 minutes to activate the pectin and evenly distribute the spices.
  5. Jar the jam: Carefully ladle the hot jam into sterilized jars, leaving 1/4 inch of headspace at the top to allow for expansion.
  6. Seal and process: Seal the jars with sterilized lids. If desired, process the jars in a boiling water bath for 5-10 minutes to ensure long-term preservation and safe storage.
  7. Cool and store: Let the jars cool completely at room temperature. Check that the seals have set properly before storing the jam in a cool, dark place.

Notes

  • Use fresh, ripe berries for the best flavor and natural sweetness.
  • Pectin helps the jam to set; do not skip it unless you prefer a runnier texture.
  • The boiling water bath processing is optional but recommended for long-term shelf stability.
  • Store opened jam in the refrigerator and consume within three weeks.
  • You can adjust the sugar amount slightly depending on your sweetness preference, but it may affect preservation.
