  • 4 cloves garlic, minced
  • 1 large onion, sliced

Instructions

  1. Sear the Beef: Pat the chuck roast dry and season with salt and pepper. Heat oil in a large skillet over medium-high heat and sear the roast on all sides for 3-4 minutes per side until deeply browned. Transfer the seared roast to the slow cooker.
  2. Prepare Cooking Liquid: In a bowl, whisk together the au jus gravy mix, onion soup mix, beef consomme, water or beef broth, Worcestershire sauce, and minced garlic. Pour this mixture evenly over the roast in the slow cooker.
  3. Add Onions and Slow Cook: Place the sliced onions on top of the roast. Cover the slow cooker and cook on LOW for 7-8 hours or on HIGH for 4-5 hours until the beef is fork-tender and easily pulls apart.
  4. Shred the Beef: Remove the beef from the slow cooker and shred it with two forks on a cutting board, leaving some larger pieces to maintain texture. Discard any large pieces of fat.
  5. Strain Au Jus: Strain the cooking liquid through a fine mesh strainer into a saucepan, skimming off any fat if desired. Taste and adjust the seasoning as needed, then keep warm over low heat.
  6. Toast Hoagie Rolls: Preheat the oven broiler to high. Arrange the hoagie rolls open-faced on a baking sheet, spread softened butter on the cut sides, and broil for 1-2 minutes until lightly golden. Watch carefully to prevent burning.
