  • 1 Tbsp olive oil
  • 1/3 cup milk
  • 2/3 cup sour cream
  • 1/2 cup mozzarella, grated

Veggies and Seasonings:

  • 1 1/2 cup baby spinach, fresh
  • 1 small tomato, chopped
  • 1 garlic clove, minced
  • 2 scallions, chopped
  • 2 Tbsp parsley/basil, chopped
  • Parmesan cheese
  • Black pepper, freshly ground
  • Salt to taste

Instructions

  1. Cook Tortellini: Cook tortellini per package instructions or use a large pan to cook in olive oil until golden-brown.
  2. Prepare Sauce: Add milk, then sour cream and cook until sauce thickens.
  3. Add Vegetables: Stir in garlic, scallions, tomato, spinach, parsley, and black pepper.
