- 15oz/ 400g cheese tortellini, refrigerated
Creamy Sauce:
- 1 Tbsp olive oil
- 1/3 cup milk
- 2/3 cup sour cream
- 1/2 cup mozzarella, grated
Veggies and Seasonings:
- 1 1/2 cup baby spinach, fresh
- 1 small tomato, chopped
- 1 garlic clove, minced
- 2 scallions, chopped
- 2 Tbsp parsley/basil, chopped
