Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Roast the Tomatoes: Spread the halved cherry tomatoes on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes or until caramelized and bursting with flavor.
  3. Cook the Pasta: Meanwhile, cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  4. Sauté the Garlic: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
