Ingredients

Scale

For the Chicken:

  • 1 pound boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust for spice level)
  • Salt and pepper to taste

For the Ramen:

  • 4 cups chicken broth
  • 2 cups water
  • 2 packs of instant ramen noodles (discard seasoning packets)
  • 1 cup heavy cream
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (or more to taste)
  • 1 tablespoon sesame oil
  • 2 green onions, sliced (for garnish)
  • Fresh cilantro (for garnish, optional)
  • Lime wedges (for serving, optional)

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and red pepper flakes. Cook the chicken for approximately 6-7 minutes on each side until fully cooked and golden brown on the outside. Remove the chicken from the skillet and let it rest before slicing into bite-sized pieces.
  2. Prepare the Broth: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and water, bringing the mixture to a simmer. Add the instant ramen noodles and cook according to package instructions, usually 3-4 minutes, until the noodles are tender.
  3. Make it Creamy: After the noodles are cooked, stir in the heavy cream, soy sauce, sriracha, and sesame oil. Adjust the spice level by adding more sriracha as desired. While the noodles cook, slice the rested chicken into bite-sized pieces.
  4. Serve: Add the sliced chicken back to the skillet and stir to combine everything well. Serve the ramen garnished with sliced green onions and fresh cilantro. Offer lime wedges on the side for an optional fresh citrus burst.

Notes

  • Adjust red pepper flakes and sriracha to control heat level based on preference.
  • Substitute chicken thighs with breasts or use shrimp or tofu as alternative proteins.
  • Enhance nutrition by adding vegetables such as spinach, bok choy, or bell peppers.
  • Use fresh ramen, udon, or soba noodles for different texture and flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently and add extra broth or water if needed.
  • For a lighter cream option, substitute heavy cream with coconut milk.
  • You can prepare the chicken and broth ahead of time but cook the noodles fresh when ready to serve.
