  • 8 hard-boiled eggs (see note 1)

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Hard boil the eggs: Place eggs in a single layer in a saucepan and cover them completely with water. Bring the water to a roaring boil over high heat. Once boiling, turn off the heat and cover the pan with a lid. Let the eggs sit in the hot water for 12 minutes to cook through.
  2. Cool and peel: Transfer the eggs to a bowl filled with ice water and let them cool for 5 minutes. This stops the cooking process and makes peeling easier. Peel the eggs carefully once cooled.
  3. Prepare the egg mixture: Separate the egg yolks from the whites. Chop the egg whites finely and place them aside. In a separate small bowl, mash the yolks and whisk together with mayonnaise, diced celery, dill weed, Dijon mustard, onion powder, garlic powder, salt, black pepper, and paprika until the mixture is creamy and well combined. Adjust the seasoning to your taste.
