Bread:

  • 8 small but thick slices of bread (sourdough or any firm bread works well)

Cheese:

  • 8 square slices of cheddar cheese

Cream Cheese Mixture:

  • 5 oz (150g) cream cheese
  • 1 tbsp Parmesan cheese
  • 1 tbsp mayonnaise (optional, see notes)

Additional:

  • Butter, as needed for grilling

Instructions

  1. Spread cream cheese evenly over one side of each bread slice. Spread an even layer of cream cheese on one side of each bread slice.
  2. Sprinkle Parmesan cheese on top of the cream cheese layer. Evenly sprinkle Parmesan cheese over the cream cheese layer on each slice.
  3. Optional: Spread mayonnaise over the outside of each bread slice for extra crispiness. If desired, spread mayonnaise on the outer side of each bread slice.
  4. Layer cheddar slices over 4 of the bread slices (cream cheese side up), then top with the remaining bread slices (cream cheese side down) to form sandwiches. Place cheddar slices on 4 bread slices with the cream cheese side up, then top with the remaining slices, cream cheese side down, to create sandwiches.
  5. Heat a skillet over medium heat and melt butter. In a skillet over medium heat, melt butter.
