Instructions

  1. Boil Sugar Mixture: In a medium saucepan over medium heat, bring the water and granulated sugar to a boil, stirring occasionally to dissolve the sugar completely.
  2. Add Cranberries and Aromatics: Once boiling, add the cranberries, finely chopped shallot, brown sugar, ground cinnamon, and apple cider vinegar to the saucepan. Stir to combine all ingredients thoroughly.
  3. Cook Cranberries: Continue cooking over medium heat for about 5 minutes, stirring occasionally, allowing the cranberries to begin popping and releasing their juices, which thickens the mixture.
  4. Incorporate Apples and Raisins: Add the diced tart apples and golden raisins to the saucepan. Reduce the heat to a simmer and cook for 10-15 minutes, stirring frequently, until the chutney thickens to your desired consistency.
  5. Serve or Store: The chutney can be served warm immediately or chilled in the refrigerator. It pairs wonderfully as a condiment with roasted meats or as a spread for sandwiches.
